In Inventory, find the instance by scanning the barcode.

Open the instance and scroll select the the given holdings record displayed in the top of the instance detailed view. Click View holdings to open the detailed holdings view.

In the top right corner of the detailed view, click the Actions menu, and select Edit to open the edit holdings view.

In the edit view, change the Call number to the new shelf.
Save the record.

The update should now be visible in Inventory
