Aim 4 Current Efforts:

North Carolina State University is currently developing a framework of food safety core competencies which academic programs may use as a reference point in developing curriculum.  The purpose of the current study is to apply the Delphi method in identifying and prioritizing core competencies which are relevant to postsecondary food safety education based on data collection and feedback from food safety professionals.

Aim 4 Completed Efforts:

The Department of Food Science at Cornell University has recently developed a Food Safety option to the already existing Basic Food Science and Operations & Management tracks in the program. A copy of the Food Safety curriculum with a list of course requirements can be found here.

Haley Oliver, Assistant Professor at Purdue University, recently developed undergraduate laboratories implementing PFGE and PCR.
