Aim 3 Current Efforts:
While this component of the project is scheduled to start in 2012 (i.e., project year 2), pilot activities have been initiated at different participating institutions in 2011. Specifcally, three undergraduate students with specific interests in food safety participating in the 2011 Cornell Summer Undergrduate Research Program, inlcuding one undergrduate student each from North Carolina A&T State University and Purdue.

Our food microbiology and safety laboratory is currently hosing one undergraduate research assistant to conduct research related to lactic acid fermentation using agricultural by-products as growth medium for the production of functional ingredients.   In addition three high school students will participate in the research apprenticeship program (RAP) this summer 2011 and work on research projects related to food safety and protection.
