Colorado State University Food Safety Program

Food Safety teaching, outreach, and research programs at Colorado State University can be found in multiple departments, colleges, and fields. Key faculty at Colorado State University with active food safety research, outreach, and teaching programs include:

John Sofos, Professor, Department of Animal Science

Lawrence Goodridge, Associate Professor, Department of Animal Science

Keith Belk, Professor, Department of Animal Science

Jack (John) Avens, Professor, Department of Food Science and Human Nutrition

Patricia Kendall, Professor, Department of Food Science and Human Nutrition

Marisa Bunning, Assistant Professor, Department of Food Science and Human Nutrition

Doreene Hyatt, Professor, Department of Microbiology, Immunology and Pathology

Frank Gary, Professor, Department of Clinical Sciences

Undergraduate Food Safety Studies at Colorado State University: Undergraduates interested in training in food safety typically apply to and enroll in a major in Food Science and Human Nutrition or a major in Animal Science at Colorado State University. While there is no designated "Food Safety" major at Colorado State University, an Interdisciplinary Studies Program in Food Science/Safety is available to undergraduates.  The undergraduate interdisciplinary minor in Food Science/Safety is designed to be a supplement to the student's major. It is made up of a core of required courses (6 credits), foundation courses in the sciences (6 credits minimum), and a selection of advanced courses taken from at least three of the six cooperating departments (12 credits minimum) (see courses available below):

  • Food Science and Human Nutrition
  • Animal Sciences
  • Soil and Crop Sciences
  • Horticulture and Landscape Architecture
  • Microbiology, Immunology and Pathology
  • Environmental and Radiological Health Sciences

The interdisciplinary Studies Program in Food Science/Safety provides for excellent food safety training with a number of food safety, epidemiology and microbiology classes that provide education related to food safety available to students.

Graduate Studies in Food Safety at Colorado State University: Graduate students interested in training in food safety typically apply to and enroll in MS or PhD programs in Animal Science or Food Science and Human Nutrition at Colorado State University.  The graduate research and education program is a cooperative effort offered by seven departments:

  • Food Science and Human Nutrition
  • Animal Sciences
  • Soil and Crop Sciences
  • Horticulture and Landscape Architecture
  • Microbiology, Immunology and Pathology
  • Clinical Sciences
  • Environmental and Radiological Health Sciences

Faculty members involved in food safety from each department have support for research in the areas of food science and food safety, resulting in the creation of the Interdisciplinary Studies Program in Food Science/Safety. Faculty research interests are mainly focused in food microbiology, food safety, red meat safety, food safety education, food product development, food processing and integrated production. Graduate programs are customized to fit each student's specific interests and objectives. Students in the program receive their degree from their home departments (i.e. Animal Science, Food Science and Human Nutrition, etc.), and also a certificate of completion of the Interdisciplinary Studies Program in Food Science/Safety, which will become part of the student's official record.

Interdisciplinary Studies Program in Food Science/Safety (ISP-FSS): The Interdisciplinary Studies Program in Food Science/Safety (ISP-FSS) is offered at both the undergraduate and graduate level. The program is designed to provide students interested in multiple aspects of food safety (pre-harvest, post harvest, processing, product development) with the background necessary for understanding the roles and responsibilities of various members within the food system and how they play a part in making sure our food is safe. The program is a cooperative effort of faculty in seven departments and three colleges within the University who share a common interest in food quality, safety and integrated production/processing.
